Chocolate mini biscuits
If your children are craving sweets and they want to make something themselves (with very little help), we’ve got some easy peasy biscuit recipe for them. These Chocolate Mini Biscuits only need a few simple ingredients, which you definitely have in the kitchen. They are super simple and especially children will enjoy baking them.
We had two little/big assistants. Charlotte and Lily enjoy baking very much and they love to hang out in the kitchen with me (Zuzana) all the time. My daughters used their fantasy to create the Chocolate mini biscuits in shapes of cats and bears.
Your kids can create any shape, as the dough is easy to handle. Another advantage of chocolate mini biscuit dough is that it is not very sticky, therefore ideal for kids.
Chocolate mini biscuits last for quite some time. You can keep them in the airtight container on your kitchen counter.
Ingredients
250g Spelt or all-purpose flour
100 g confectionery sugar
250 g butter
100 g shredded coconut
2 - 3 tablespoons cocoa
2 gg yolks
1/2 teaspoon baking powder
1 teaspoon vanilla essence or vanilla sugar
Directions
1. In a bowl combine these ingredients: flour, sugar, coconut, cocoa, baking powder, and vanilla sugar.
2. Add egg yolks.
3. Add softened butter.
4. Mix until all ingredients are combined.
5. Wrap in foil and put in the refrigerator for 30 minutes.
6. Preheat the oven to 180 degrees. Remove the dough from the refrigerator and shape small balls.
7. Place them on a finely floured worktop and gently press each ball with a fork.
8. Place on a baking sheet lined with baking paper and bake for 8 minutes.
