Coleslaw salad 

Recipe for Coleslaw salad appeared for the first time in 1770 Dutch cookbook which contains a recipe attributed to the author's Dutch landlady, who mixed thin strips of cabbage with melted butter, vinegar, and oil.

Coleslaw from the Dutch term koolsla meaning 'cabbage salad', also known as cole slaw, or simply as slaw.

You won’t believe how easy coleslaw is to make at home. We love using a combination of red and green cabbage which makes this dish really colorful. However, you can use any cabbage you’ve got at home.

There are many variations of Coleslaw salad, but we like the classic simple version with very simple creamy dressing with a hint of sweetness.

We would recommend to prepare coleslaw salad in advance (or at least couple of hours before serving, ideally overnight). The flavour of the salad will be even tastier after few hours in the fridge.

Ingredients

500g cabbage – we used 250g green cabbage and 250g purple cabbage -sliced

2-3 medium size carrots – shredded

1 medium size red onion – cut

 

Dressing

70g mayonnaise

70g soured cream

35ml lemon juice

35g mustard

35g granulated sugar

35 ml white wine vinegar

Salt and pepper to taste

 

Directions

1. Prepare vegetables and chop onions.

2. Prepare dressing: combine 70g mayo, 70g soured cream, 35ml lemon juice, 35g mustard, 35g sugar and 35ml vinegar.

3. Mix vegetables and dressing and cover with plastic foil. Put into refrigerator for at least 2 hours before serving.
