Lemon Madeleines

Lemon madeleines are a lovely shell-shaped sponge cake. A properly made madeleine has little bump in the centre of it, called "LA BOSSE" (belly). They are delicious French classic companion for afternoon tea.

Madeleines are light, moist, and slightly crispy on the outside flavoured with zesty lemon.

Lemon is a fantastic flavour for Madeleines, rich in vitamin C and can be found all year round.

This recipe takes about 20 minutes to prepare and bake plus a little more for resting time where they will just sit. Lemon madeleines can be frozen very easily. Let the madeleines fully cool and then place them in a freezer-safe bag or container.

Ingredients 

160g butter + extra for greasing

4 eggs - room temperature

160g all-purpose flour

180g caster Sugar

1 teaspoon baking powder

5-6 tablespoons lemon juice

1 teaspoon lemon zest

Extra - madeleine pan

Directions

Preheat oven to 200 degrees.

1. By hand beat sugar and eggs until white.

2. Add flour and baking powder.

3. Add butter, melted but not warm.

4. Add lemon zest. Mix well and add lemon juice.

5. Grease the form with butter.

6. Fill the madeleine pan all the way to the top and bake:

on 200 degrees - 6 minutes

on 180 degrees – another 4 minutes. Do not open the oven!
