Quinoa with tuna

One of the maaany things I love about quinoa is that you can have it as a quinoa salad, main course or a side dish and it always tastes delicious. Combine it with salad lettuce or add a hot sauce on the top. Possibilities are never ending. 

Ingredients 


200g 3 colour quinoa – serves 2 

1 zucchini 

1 teaspoon salt 

½ can chickpeas 

½ Lemon 

3 tablespoons olive oil 

1 can of tuna 


Directions

Combine quinoa and water. Bring to a boil over medium-high heat, then decrease the heat a bit to maintain a gentle simmer. Cook for 12-15 minutes. Quinoa should not be mushy or hard. Set aside and drain. Leave quinoa in a colander for 2-3 mins so you get rid off all excess water.

Wash, cut and fry zucchini. Season with salt.

Add sweet corn and chickpeas. Mix everything together.

Add lemon juice from ½ lemon. Season with salt and pepper and serve.
