Australian visit - Pork ribs

My (Zuzana’s) friend Nadja came to visit South of France during school holidays. I decided to invite her over and contribute with a recipe from her homeland – Australia. Nadja comes from Gold Coast - south from Brisbane and I met her few years ago at my daughter’s school. Our daughters became best friends and got to know each other quite well.

Nadja moved from Australia to the South of France with her partner and kids 6 years ago. Since then, family moved to Burgogne few years ago, but they come and visit their during school holidays. Nadja is a yoga teacher and she enjoys exploring new countries.

Australians are definitely carnivores and ribs are on their menu very often. Nadja prepares pork ribs for all the birthday parties of her 3 kids.  It is always a special birthday request.

Nadja also brought delicious red wine – Shiraz from Southeastern Australia, which goes perfectly with pork ribs and especially this recipe.

Ingredients 

 

20 pork ribs

2-3 tablespoons of olive oil

Seasoning

40g dark brown sugar

20g salt

25g paprika 

¼ teaspoon freshly ground black pepper

 

Baked sweet potatoes

1 kg of sweet potatoes

2-3 tablespoons of olive oil

20g butter

Salt and pepper to taste

Optional - fresh herbs - rosemary

 

Green beans

½ kg of green beans 

1 small onion

2 cloves of garlic

2 tablespoons of olive oil

Salt and pepper to taste

 

Directions

 

Preheat oven to 180 degrees.

1. Coat the ribs with olive oil.

2. In a bowl mix together 40g dark brown sugar, 20g salt, 25g paprika and ¼ teaspoon ground black pepper.

3. Season the ribs with the mixture.

4. Put the ribs on the baking tray and cover with aluminium foil. Bake for 45 minutes and check if they are cooked. If needed, put them back into the oven and bake 5-10 minutes more (depending also on the size of the ribs).

We use aluminium foil to make sure that ribs will not dry out during baking.

Once ribs are baked, remove aluminium foil and return them back to the oven for additional 15 minutes so they are nice and crispy.

5. Peel and cut potatoes.

Transfer potatoes to baking tray and season with olive oil, butter, salt, pepper and herbs. Bake for 45 minutes on 180 degrees.

6.  Cut the edges of green beans and cook in boiling water.

7. Heat up olive oil, fry onions together with crushed garlic and toss into drained green beans. Season with salt and pepper.
