Cauliflower coconut soup

Maybe you think that this combination goes well in vegetable curry, but that’s not true! Try our creamy Cauliflower coconut soup and you will see and taste how delicious this combination is.

Made with a base of cauliflower and coconut milk this makes a lovely and filling - 100% vegan and dairy free meal.

Cauliflower coconut soup is super easy recipe to make and it requires just a few simple ingredients.

Cauliflower has lots of antioxidants that can protect against cancer. It also contains fiber which helps with weight loss and digestion. Coconut cauliflower soup is as healthy as it is delicious.

Ingredients

4-6 servings

1 medium size cauliflower

500 – 700 ml of vegetable stock

1 can of coconut milk

1 medium seized onion

1 clove of garlic

1 piece of rosemary

1 piece of thyme

Salt & pepper

2-3 tablespoons olive oil

Directions

1. Prepare vegetable stock. 

2. Cut the cauliflower into florets. 

3. Heat up olive oil and fry onions together with garlic. Add chopped herbs.

4. Add cauliflower and roast for 2-3 mins.

5. Add vegetable stock. The amount of stock depends on the size of cauliflower. Don’t add all of the stock at the same time – put some on a side, you might want to use it later or in case you think that cauliflower needs more liquid for cooking.

6. Add coconut milk and cook everything together until cauliflower is cooked (soft). Puree the soup in blender and season with salt and pepper. Add leftover vegetable stock if needed. It depends on how thick you like your soup.  

Serve with walnuts and vegan cheese (or goat cheese) and some fresh bread.
