Artichoke dip
Our delicious Artichoke Dip is one of our favourite easy appetizers, made with simple ingredients in less than 30 minutes! We love it served warm, with different kinds of crackers or bread or even grissini. You can find a recipe for our home-made Grissini here.
All the cheeses we used in this recipe will melt in your mouth. They are also easy to find in the store. If you can’t find pecorino cheese you substitute it with parmesan cheese. We love it, because you can feed lots of people with one tray.
This baked artichoke dip can be made up to 1 day ahead of time. Don’t bake it and store it in the refrigerator until ready to bake.
Ingredients
2 tablespoons olive oil
1 clove of garlic
150 - 170g spinach
1 can of artichokes - around 200g
Salt and pepper
120g of cream cheese – Philadelphia
1 ball of mozzarella
100g sour cream
30g pecorino or parmesan cheese
Directions
1. Heat up alive oil and fry garlic. I would recommend to use garlic press, but you can also just finely chop the garlic.
2. Add chopped spinach. Fry spinach until its size reduces. Don’t drain.
3. Add chopped artichokes. Season with salt and fry for 2-3 mins.
4. Stir in sour cream and mozzarella.
5. Add cream cheese and pecorino. Mix well until cheese is melted.
16. You can serve this dip right away or you can put it into oven proof dish and put it into the oven for a few mins (180 degrees around 15 mins). Once you can see the top of the dip slightly browned you can take it out of the oven. Serve with a bread.
