Lentils salad
Our simple lentil salad is made with brown lentils, cucumber, peppers, onions and herbs. Lemon mustard dressing will add an extra kick and freshness.
Lentils are packed with protein. They are also naturally vegetarian, vegan and gluten free. Lentils are not only super food which will fill you up, but you can use them in many recipes. Lentil salad can be perfect for lunch or dinner, but you can enjoy it as a side dish for a BBQ.
There are many kinds of lentils. Most commonly used lentils are:
· Brown
· Green
· Yellow and Red
· Beluga
· Puy – we usually use these kinds of lentils. They come from the French region Le Puy. These lentils are similar in colour to green lentils, but they are about one-third of the size and have a peppery taste.
Lentils salad contains crunchy veggies, which makes them light and refreshing plus it is easy to prepare!
INGREDIENTS
190 g Uncooked Brown Lentils
1 Cucumber
1 Chopped Red Pepper
1 Chopped yellow Pepper
1/2 Red Onion
5 stalks of Chopped Cilantro
2 stalks of chopped Mint
For the dressing
85ml olive oil
2 tablespoons of Dijon mustard
¼ teaspoon Red Pepper Flakes
1 teaspoon brown sugar
Juice from 2 Limes
2 tablespoons of lemon juice
1 teaspoon salt
½ teaspoon freshly grounded pepper
½ - 1 teaspoon tabasco – depending on your preference
INSTRUCTIONS
1. Chop all the vegetables. Cook lentils according to the instructions on the package. Remember you don’t need to cook it until mushy. Drain and let cool completely.
2. Make a dressing.
Combine: 85ml olive oil, 2 tablespoons of Dijon mustard, ¼ teaspoon Red Pepper Flakes, 1 teaspoon brown sugar, juice from 2 Limes, 2 tablespoons of lemon juice, 1 teaspoon of salt, ½ teaspoon freshly grounded pepper, ½ - 1 teaspoon tabasco. Mix well.
3. Mix everything together and drizzle with dressing.
4. Add freshly chopped Coriander and mint. Refrigerate for at least 2 hours before serving.
