Papa a la huanci’na sauce

Ingredients

3 orange peppers Aji Amarillo

2 cloves of garlic

1 Queso cerrano cheese or ricotta – amount depends on how hot you like your sauce

75 ml milk

1 teaspoon sunflower oil

Crackers

Salt to taste

 

Directions

1. Cook orange peppers for 10 minutes. Take out of the pan and cut each pepper lengthwise.

Remove stems and seeds.

2. Heat up 1 tablespoon of sunflower oil and fry peppers for about 10 mins. Flip regularly.

3. In a small blender combine all orange peppers, ricotta, and 75 ml of milk and crackers.

Salt to taste. You can always add more ricotta and crackers.
