Pumpkin granola
Pumkin season has arrived. We have yet another pumpkin recipe, but this time in something little unusual – pumpkin granola. It is not only super easy to prepare, but it is packed with healthy yet delicious ingredients.
The combo of pumpkin and pumpkin spices is absolute perfection. When you bake pumpkin granola, your house will be filled with that autumn pumpkin spice fragrance typical for this time of the year.
Add honey or maple sirup for sweetness and nuts for crunchiness.
Store in airtight container for up to three weeks.
Serve with your favourite milk or, sprinkle on top of Greek yogurt, or enjoy as-is!
Dry ingredients
300g oats
100g pumpkin and sunflower seeds
120g nuts of your choice
½ teaspoon of salt
2 teaspoons of cinnamon
1 and ½ teaspoon pumpkin pie spices (all spices)
Wet ingredients
120g pumpkin puree – you can find a recipe for pumpkin puree here
60ml coconut oil (melted)
1 teaspoon vanilla essence
120g honey melted (if you want to make it vegan, use maple sirup)
2egg whites (again if you want to make it vegan, use 2tablespoons of melted coconut oil)
Directions
Preheat oven to 160 degrees.
1. Combine all dry ingredients: 300g oats, 100g pumpkin and sunflower seeds, 120g nuts, ½ teaspoon salt, 2 teaspoons cinnamon, 1 and ½ teaspoon pumpkin spices.
2. Beat egg whites with a fork.
3. Combine all wet ingredients: egg whites, 120g pumpkin puree, 60ml coconut oil, 1 teaspoon vanilla essence, 120g honey.
4. Combine wet and dry ingredients.
5. Spread the mixture on the baking tray lined with baking paper. Bake for 40 minutes and stir every 10 – 15 minutes.
