Pumpkin seeds

Don’t throw away seeds from your pumpkin this year. Make a healthy and tasty snack in few simple steps and add some of your favourite spices.

Maybe you will be surprised, but pumpkin seeds have many benefits. Pumpkin seeds may be small, but they are packed with valuable nutrients. They are full of: fibre, protein, fat (omega6s), vitamin K, magnesium, iron, zinc and vitamin B2. They also contain lots of antioxidants.

You can season pumpkin seeds with any spices. Add smoked paprika or curcuma and you will get another portion of healthy yet tasty home-made snack.

Pumpkin seeds can be original healthy appetizer and they are really delicious. They are vegetarian and vegan.

Ingredients

Pumpkin seeds from 1 pumpkin

2 tablespoons of olive oil

1 teaspoon of curry

1 teaspoon of sweet paprika

1 teaspoon garlic powder

Salt and pepper to taste

1. Rinse seeds and strings under cool water and the seeds will separate easily. Transfer on the paper towel and dry them. Preheat oven to 180 degrees.

2. Mix olive oil with seeds. Split the seed into two bowls because we will be preparing seeds with two flavours.

3. Season first bowl of seeds with curry, ½ teaspoon of garlic powder, salt and pepper. Mix well.

4. Season second bowl of seeds with paprika, ½ teaspoon of garlic powder, salt and pepper. Mix well.

5. Spread the seeds on the prepared baking tray lined with baking paper in a single layer. Seeds shouldn’t be sticked together. Bake different flavors seeds separately. Bake for 10-12 minutes, taste them.  If you want your pumpkin seeds to be crunchier, put them into the oven for another 1-2 minutes.
