Speculoos cups
Are you also in love with caramel speculoos biscuits? Good news, we have a special mousse recipe for you.
Speculoos biscuits are typical Dutch biscuits, with really unique taste which we use in many recipes. You can try our Strawberry speculoos cake or our latest addition – speculoos cups.
Speculoos cups are perfect for special occasion or if you want to save some time with preparation of dessert. You can prepare it well in advance and make a serving special by using fancy glasses instead of regular cups.
This recipe is super easy and it takes just 20 minutes to prepare.
6 servings – in white wine glasses
Ingredients for the mousse
6 eggs
220 g milk chocolate
Ingredients for the topping
240g double cream
60g mascarpone
2 tablespoons biscoff/speculoos biscuits cream
5 pieces of speculoos biscuits
Directions
1. Separate eggs whites from egg yolks.
2. Melt the chocolate in bain marie.
3. Let cool melted chocolate so it is lukewarm and add egg yolks. Mix well so eggs are well combined with chocolate.
4. Whisk the egg whites until they are thick and foamy.
5. Fold in whipped egg whites to chocolate mixture – 1/3 at the time.
6. Divide mousse into 6 cups (wine glasses) and put into the fridge for at least 4 hours or overnight.
7. Beat 60g of mascarpone with 2 tablespoons of speculoos/biscoff biscuits.
8. Add 240ml double cream. Whip until the cream is thick and fluffy (do not overbeat).
Decorate each cup with whipped cream. You can use pipping bag as well.
Crumble biscuits for a decoration on the top od whipped cream.
