Vegetarian Tikka Masala
Usually when you hear Indian sounding recipe, you might think that it is complicated. This one is not. You will need just couple of basic Indian spices. Vegetarian Tikka Masala is not only vegetarian, but also vegan, gluten free, dairy free and soooo delicious.
On the top of that it is a time and money saving recipe for veggie lovers.
Rice can accompany this recipe perfectly, but you can also switch to healthier version - quinoa or you can enjoy it on its own. Vegetables will fill you up and the spices will satisfy your taste buds.
Vegetarian Tikka Masala freezes well, which is another reason to love it.
It is crucial, that you will use a fresh ginger (as with all Indian recipes). Fresh ginger will add extra kick to a sauce.
Ingredients
1 big onion
6 cloves of garlic
2 tablespoons of coconut oil
1 tablespoon of freshly grated ginger
2 bell peppers – 1 red and 1 yellow
2 cans of tomatoes (1 regular size is 400ml)
2 cans of chickpeas
1 can of coconut milk
4 teaspoons of Gran Masala spices
Salt & pepper to taste
Directions
1. Chop onions and press garlic. Peel peppers and cut them like noodles /stripes.
2. Heat up coconut oil and fry onions. Add pressed garlic.
3. Add grated ginger. Add peppers and fry for 5 mins.
4. Add gran masala spices and fry for a minute on a low heat.
5. Add chickpeas and mix well. Fry for a minute.
6. Add tomatoes.
7. Add coconut milk. Cook for 10 – 15 minutes and season with salt & pepper.
Serve with quinoa or rice.
