Zucchini falafel

What is falafel?

A traditional Middle Eastern dish, falafel are fried or baked balls of ground chickpeas, parsley and spices such as cumin and coriander.

It’s a popular street food in the Middle East and in Europe. You can find Falafel stuffed into pita bread together with hummus fresh veggies and herbs. You can find recipe for our home made hummus here.

Our Falafel is enriched with veggies, which will add extra moist and tenderness.  

You can deep fry falafel or if you are looking into healthier option, you can bake it in the oven.

Zucchini falafel is great option for a lunch with a salad, you can enjoy it as a snack or appetizer. It is also amazing party food which you can serve with homemade hummus. You can find recipe for a hummus here.  

Falafel will last in the fridge for couple of days, but you can also freeze it.

 Ingredients

360g chickpeas

1 small onion – chopped in few pieces

2 cloves of garlic

4-5 stalks of parsley

1 medium sized zucchini (shredded)

7 tablespoons of chickpea flour 

1 teaspoon of salt

1 teaspoon ground coriander

1 teaspoon of cumin

¼ teaspoon black pepper

Squeeze of lemon

Vegetable oil to fry

 

Directions

1. In a blender combine chickpea, onion and garlic. Blend until smooth.

2. In a bowl combine chickpea mixture and the rest of the ingredients: 4-5 stalks of chopped parsley, zucchini, 7 tablespoons of chickpea flower, 1 teaspoon of salt, 1 teaspoon ground coriander, 1 teaspoon of cumin, squeeze of lemon. Cover with plastic foil and put into the fridge for an hour.

3. Make balls – size as you wish.

4. Fry balls or bake on 200 degrees – 25 mins (medium sized balls).
