Coca - Cola cake

Coca - Cola cake is moist chocolate cake that’s full of flavor and wonderfully tender. Coca - Cola cake comes from state of Georgia in the US, where Coca - Cola was born.

This chocolate cake is one of those cakes where you just mix everything together in a bowl. No mixer is needed. Serves about 16 people so it’s prefect for a birthday party or any kind gathering where you need to feed bunch of people. 

Taste of Coca-Cola cake might surprise you, because it doesn’t actually taste like Coca-Cola.

Coca-Cola cake tastes very chocolaty even though there is no chocolate, only cocoa powder. Coca-Cola adds of fluffiness and moisture.

If you’ve never tried it before, you really have to! You’ll be making it again and again!

 

Ingredients

230 grams all-purpose flour

350 grams granulated white sugar

5 grams baking soda

1/2 teaspoon salt

2 large eggs, at room temperature

 

130 ml buttermilk, at room temperature

1 teaspoon pure vanilla extract

115 grams unsalted butter, at room temperature

50 grams unsweetened natural cocoa powder

120 ml sunflower oil

250 ml classic Coca-Cola  

Chocolate Frosting

115 g unsalted butter, at room temperature

25 g unsweetened cocoa powder

80 ml Coca-Cola

1 teaspoon pure vanilla extract

340 g icing sugar (sifted)      

120 ml sunflower oil      

Directions

                 

Preheat oven to 180 degrees 

1.  In a pan combine: 115g butter, 50g cocoa, 120 ml sunflower oil and 250ml Coca-Cola. Bring to boil (on low heat) until you see the foam and stir all the time. Let cool for couple of minutes.

2. Prepare buttermilk – combine 130ml of milk and few drops of lemon. Stir. Let sit for 5 mins.

3. In a large bowl whisk together the flour, sugar, baking soda, and salt.

4. In another bowl, whisk together the eggs, buttermilk and vanilla extract.

5. Pour Coca-Cola mixture into flour mixture and whisk until combined.

6. Then stir, or whisk, the egg mixture into the batter until combined.

7. Butter a cake pan (23 cm) and then flour it.

8. Pour the batter into the prepared pan and bake for about 30 - 35 minutes or until the top is firm and a toothpick inserted into the centre of the cake just comes out clean (the cake will just be starting to pull away from the sides of the pan). 

Chocolate Frosting

9. In a saucepan combine 115 g butter, 25 g unsweetened cocoa powder, 120 ml sunflower oil, 80 ml Coca-Cola and 1 teaspoon of  vanilla extract and bring to boil and set aside.

10.  Place 340 g of icing sugar (sifted) in a large bowl. Slowly add Coca-Cola mixture into the bowl. Stir well (for about 5 mins) to avoid lumps.   

11. Slowly pour the warm frosting over the warm chocolate cake. Let it cool at room temperature and put into the fridge overnight or at least for 12 hours.
